Wild Blueberry Irish Soda Bread

INGREDIENTS

4 cups flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
2 teaspoons ground cardamom
6 tablespoons cold butter, cut in chunks
1 1/2 cups buttermilk
1 cup Josh Pond frozen wild blueberries

INSTRUCTIONS

    1. Combine first 6 ingredients in a large mixing bowl. Cut in butter with a pastry knife until well blended.
    2. Stir in the buttermilk until combined, then gently mix in the blueberries.
    3. Turn out onto floured surface and gently knead a few times. Form into two balls and set on buttered parchment paper on cooking sheet.
    4. Slightly flatten balls, and slice across top with a sharp knife.
    5. Bake at 350 degrees for approximately 45 minutes until dark golden brown. Enjoy warm!
