JOSH POND’S CAVE-AGED WHITING ROBIOLA

Whiting Robiola is a handmade, bloomy-rind cheese crafted in the style of a traditional Northern Italian Robiola. This cheese is made with the fresh raw organic goats's milk in the summer from our herd of Oberhasli goats, and with the raw organic cow milk of Tide Mill Farm in the winter. It is typically aged between 60 and 90 days. Adorned with a flavorful bloomy rind, this young cheese is supple, rich, with hints of butter and wild mushrooms.

Milk: Josh Pond Farm’s certified-organic raw goat milk and/or Tide Mill Farm’s certified-organic raw cow milk.
