INGREDIENTS
- 1 cup Josh Pond Frozen, Organic Wild Maine Blueberries, plus more for garnish
- 1/2 cup granulated sugar
- 1/2 cup Josh Pond Organic Wild Blueberry Vinegar
- ¼ cup fresh basil leaves, plus more for garnish
- 16 oz soda water
- 2 teaspoons honey
- 2 tablespoons turbinado sugar
- Kosher salt and freshly ground pepper
INSTRUCTIONS
- Add frozen blueberries to a small bowl and let thaw (or microwave for 60 seconds). Muddle the blueberries until they’ve significantly broken down. Add the granulated sugar, basil leaves, and vinegar, stirring to combine. Place mixture into a airtight container and place in fridge for 3-5 days.
- Remove from fridge and strain the blueberry mixture through a fine mesh strainer or cheese cloth squeezing tightly to release as much juice as possible.
- On your cocktail glasses, spread a thin layer of honey around the rim and dip the honey section into coarse sugar for a sweet rim. Add 2 tablespoons of the blueberry shrub to each glass and pour over with 8 oz seltzer water individually. Add ice, frozen blueberries, and fresh basil for serving. Enjoy!
