Wild Blueberry Coconut Balls

INGREDIENTS

1 cup rolled oats

1 cup Josh Pond's frozen wild organic blueberries

1 tbsp peanut butter (or nut butter of choice)

1 tbsp maple syrup

⅓ cup shredded coconut (+ extra for coating)


INSTRUCTIONS

1. Add oats, blueberries, maple syrup, and peanut butter to a food processor, mix until combined and until you have a thick paste. Stir through the coconut.

2. Form into balls and roll in some more coconut. Enjoy!
Place the balls in an airtight container and refrigerate for up to two days or freeze for up to a month.
