INGREDIENTS
- 6-8 large blood oranges
- 1.5 cups Josh Pond's Frozen wild organic Maine blueberries, plus more for toppings
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups rolled oats
- 2 teaspoons chia seeds
- 2 teaspoons ground flax seeds
- 1/8 teaspoon cinnamon
- 1/8 teaspoon cardamom
INSTRUCTIONS
- Using a juicer, juice the blood oranges until you collect two cups. Add the orange juice, blueberries, maple syrup, vanilla, and salt to a high-speed blender and blend on high for 60 seconds or until the blueberries are finely blended.
- In a large bowl, add the oats, chia seeds, flax seeds, cinnamon, and cardamom and mix well until combined.
- Pour the blueberry-orange juice mixture into the bowl and stir until everything is combined. Add more whole blueberries and stir again. Let sit for at least 5 minutes to allow the oats, flax, and chia seeds to absorb some of the liquid, then stir again.
- Transfer the oatmeal to jars, then store in the fridge overnight. In the morning, top with yogurt, more blueberries, and diced blood oranges. Enjoy cold or warm. Overnight oats will keep in the fridge for up to 5 days.
