Below Rosy Woodsman’s pinkish hued rind is a decadently fudge-like texture and a savory flavor loaded with umami. The daily brine washing of this cheese helps to develop the richness of its flavor and the creaminess of its texture. It is also what helps contribute to the abundance of flavors; which we find to be pleasantly reminiscent of cured meat, French onion soup and mushrooms sautéed in butter.
